Snail selection can be done in any season of the year from spring to autumn either all together or little by little. The choice depends on one’s business. The snails must be put in wooden cases or crates for at least five days before being sold so that they may purge. After this operation it is possible to select the right subjects and pack them either in crates or raffia bags earmarked for purchasers.
