THE SERVICES PROVIDED BY THE
INSTITUTE OF BREEDING OF EDIBLE SNAILS IN CHERASCO
The Institute has the task of selecting the snails which
are fit for reproduction (all marketable species) and consigns all over Italy those
subjects which are fit for specific areas and type of soil. It also withdraws at
market price any quantity of edible snails coming from that reproductive stock it
had previously delivered. The Institute in Cherasco beyond supplying any technical
information also performs the following services:
- Drafting of a detailed preparation work programme to
carry out throughout the seasons.
- Drafting of the estimate of expenditure to activate
a farm.
- Technical assistance.
As the most important task of the Institute is to buy and
withdraw the product. At present it counts 20,000 members, among them breeders,
restaurateurs, journalists, gastronomers and enthusiasts. About 15,000 members are
Italian, 5,000 are scattered all over the world.
